Instructions: The evening before…grease a 9 x 13 pan. Combine soup, sherry (or juice) and mushrooms. Layer ingredients inside the 9 x 13 inside the following order: ½ in the eggs, ½ mushroom mixture, ½ cheese, remaining mushroom mixture, remaining eggs, then top with remaining cheese. Instructions: Chop onions the evening before. The next morning, grease two 9 x 13 pans with 4 t. of vegetable oil (2 t. per pan). Layer 1/3 taters, ½ onions, some salt/pepper, 1 t. oil, then repeat. Top while using last 1/3 of taters, salt/pepper to taste and drizzle with last 1t. of oil. Bake covered at 350 levels for just one hour. (uncover for last 10 mins)
